Panerai's are as reliable as any other brand IMO. Sometimes you get a lemon which breaks but it'll be repaired for free under the 2-year warranty. Anything mechanical you'll have lemons. Some brand new cars break right when you drive them off the lot. It's just a part of life that everyone has to get used to.
Of the PAM243 1000m Submersible and the PAM305, if this is your first Panerai, I would suggest the PAM305 because it'll be thinner. Being that both models are 47mm, the main thing to look at would be the thickness of the watches. It may be a huge shock for you to wear such a thick watch if you choose the PAM243.
In any case, you won't be disappointed with either of them. I think they're both awesome Panerai's.
